Blue Cheese Broiled Tomatoes
Serves 4

 

Ingredients:
4 large tomatoes
1 tsp. sugar
½ tsp. dried basil
1/4th tsp. salt
Fresh ground pepper
1 cup soft bread crumbs
2 Tbsp. melted butter
½ cup crumbled blue cheese

Directions:
Preheat broiler setting to high.  Cut stem ends off tomatoes and cut each tomato into 2 thick slices.  Place on broiler pan.

Combine sugar, basil, salt and pepper, and sprinkle a small amount onto each tomato slice.  Slip tomatoes under hot broiler and broil for 2 minutes and remove.  Add bread crumbs to melted butter and toss lightly with a fork.  Add blue cheese and toss again lightly.  Spoon atop tomato slices, and broil until crumbs are nicely browned – approximately 1-2 minutes.  Serve immediately.
