Guacamole Salsa


 

Ingredients:
2 large tomatoes, peeled, seeded and finely diced
1/2 cup medium red sweet pepper, diced
1/2 cup yellow sweet pepper, diced
3/4 cup carrot, peeled and diced
1/2 cup fresh corn kernels
2 Tbsp. chopped cilantro
2 Tbsp. chopped Italian parsley
1 jalapeno chili, seeded and finely chopped
2 Tbsp. fresh lemon juice
Salt and fresh ground black pepper
1 medium avocado, pitted

Directions:
Combine all ingredients except the avocado in a medium bowl.  Cover and refrigerate for at least one hour.  Spoon into a serving bowl.  Just before serving, stir in the avocado.  Salt and pepper to taste.  Garnish with cilantro leaves.  Serve with chips and margaritas or a Riesling.
