White Chocolate Brownies

Ingredients:
6 oz. shelled hazelnuts
1 lb. white chocolate
3 oz. butter
3 eggs
6 oz. caster sugar
6 oz. self-raising white flour
1 tsp. vanilla

Directions:
Preheat oven to 375.  Grease and line an 8 1/2 x 11 inch pan.  Roughly chop the hazelnuts.  Roughly chop all but 2 oz. of the chocolate and set aside.  Break the remaining chocolate into pieces and put in a bowl with the butter.  Place the bowl over a pan of simmering water until melted.  Leave to cool slightly.

Whisk the eggs and sugar together until smooth.  Add the melted chocolate mixture.  Add the flour, fold in hazelnuts, chopped chocolate and vanilla.  Turn mixture into the pan, and bake for 30-35 minutes, or until golden.  When cooked, the mixture will still be soft under the crust -- it firms up when cooling.
